Mediterranean Kamut Pasta

Avocado, lime and tomato are the staples of this amazing dish ! Here is a recipe that caused a big mess in my kitchen , but an even bigger smile on my face !
Anytime I use avocado and lime is a good time. I took boring pasta and made it vegan fun ! Best part of all , you don't need many ingredients to create this dish. Grab a few veggies, a few spices, a lot of smiles and you're off to a great start ! Here a very quick post on how to recreate this dish!
Ingredients
1 Lime
1 ripe Avocado
Kamut Pasta (or veggie pasta of your choice)
4 Ripe Vine Tomatoes
2 Garlic Cloves
1.5 ounces of Sun Dried Tomatoes
1 half of a Jalapeno
1 Scallion
Cayenne Pepper
Preparation
So the paste is the part that may take the most time but it is a lot of fun to make! You have the opportunity to really hone in on your creativity and play around with flavors that excite your taste buds !
Before preparing the paste, I began with kamut pasta boiling for 10 minutes (add salt if desired).
Salsa Paste
Step 1: I started by cutting the tomatoes into 4 pieces. After cutting the tomato, I took a spoon and removed all of the gooey flesh in order to make a nice texture (if you wish to have your sauce more watery and less pasty you can leave the flesh in) .
Step 2: After gutting tomatoes, I placed the pieces into a food processor. I low-speed pulsed the tomato pieces alone until the texture was nice and pasty.
Step 3: Prepare the veggies! I minced 2 garlic cloves, chopped 1.5 ounces of sun dried tomatoes, diced one scallion and diced a half of a jalapeno.
Step 4: Make the lime juice seasoning ! For this, I took a small bowl, added lime juice from one lime and then I added a dash of red cayenne pepper and stirred it up! That simple!
Step 5: Next I added the lime juice seasoning to the tomato paste and low speed pulsed for a few seconds. Then you add the prepped veggies! 2 minced garlic cloves, chopped sun dried tomatoes, diced jalapeno, and scallion!
Step 6: After all of these ingredients are in the food processor, I pulsed the mixture on high until the paste was even and smooth (the longer I pulsed , the smoother the mixture becomes). Then the salsa paste is finished !

Besides being full of healthy monounsaturated fats, avocados are rich in beta-sisterol, which may have cholesterol lowering properties and possible anti-cancer effects! Additionally, it's full of potassium, 60% higher than that of a banana. I often use avocado to replace heavy creams and butter !
